Waffles are the latest food fad in Korea. They’ve cropped up everywhere from street stalls to cafes to fancy restaurants, and have been covered with everything from fruit to ice cream to syrup. But a trend is no fun unless you really play with it, and that’s exactly what they’ve done at 와플속에 돈까스 (Donkas in The Waffle): in addition to the usual tasty toppings of whipped cream and syrup or ice cream, they’ve taken it one step further and used the waffle as a base for some tasty cutlet sandwiches!

These petite bites of batter fried cutlet topped with shredded vegetables in sauce are a delicious light meal to grab on the go. Start with your choice of chicken, shrimp, or pork, and pile on the normal sandwich fare of creamy mayonayse, rich donggasu sauce, and some pickles and vegetables, then wrap the whole thing in one of their signature rice flour waffles for a new twist on a new favorite. Just as with the American southern favorite combo of fried chicken and waffles, the sweetness of the waffle and sauces gets perked up by the savory meat and breading.

The rice four waffles used here are a big step up from the dry waffles sold by street vendors nor as dense as those heavy gourmet “belgian waffles” being sold everywhere. The crispy exterior gives way to a chewy, moist center that has a bit of moxie. They hold up well to big scoops of ice cream (try it with walnut or blueberry) and don’t get soggy in a hurry. They’re a perfect foil to a bit of whipping cream and a drizzle of berry syrup, too. Only one caveat: The chocolate sauce here is gummy and not very chocolaty, so stick with the sandwiches or the fruit flavors.

Dessert waffles with ice cream or whipping cream start at 1000 won. Sandwiches average about 2,500. This is some cheap eats! Juices and coffee are also available for around 1,500 won.
